It's been rather cold and wet today.

Especially cold and wet once you take into account that it's June.

Anyway, what else would I do on such a grim day but garden? It's not as mad as it sounds.

Honestly.

The rain had loosened up the root systems of most of the weeds and cool air made the whole experience rather refreshing...

And this recipe makes a thick, filling, healthy, and surprisingly creamy, soup.

Leek soup:
3 leeks
3-5 cloves of garlic
1-2 pints vegetable stock*
Salt
Black pepper
Olive oil to fry.

-Finely chop leeks and garlic.
-Heat oil in pan, add the leeks and garlic and fry gently until tender.
-Add stock, bring to the boil and cover.
-Boil until leeks are very soft and the liquid has reduced.
-Liquidize to consistency of choice. [If the soup is too think just add a little boiling water; boil to reduce if too thin.]
-Season to taste.

*The quality of this soup is really made on the quality of the stock. Low salt (high vegetable) is best.


On a more seasonal note the fruit is looking good. Everything seems to have at least set something... with the sad exception of some of the current bushes.

A few of the raspberries and tayberries may even be ripe in the next few days. Tasty.
